Finding Bio Shops & Bakeries that carry ‘bez lepku’ products in Prague
The Bio stores in Prague are usually your best bet for finding fresh gluten-free bread (versus packaged stuff), a wider variety of flours, and other goodies like unsweetened almond milk, gluten free oats, buckwheat groats, etc.
I passed one in almost every neighborhood in Prague and almost all of them include ‘bio’ somewhere in the name so you should be able to google the nearest one to you.

Last time I checked they were also offering a special gluten free lunch eat-in menu (simple hearty traditional style fare) but this may only be seasonal. Check with them on Facebook

When I was last there they had fresh gluten-free bread for sale up at the front counter. I’d call them to make sure before going in since a lot of these types of shops only get deliveries of fresh GF bread on certain days.
